    Healthy carrot cake

    Hi all, I am so happy that I got a job in a cake shop. It is a trainee job and I have to prove myself within the first 3 months. Our shop is specialized in variety flavored cakes and I have planned to make a carrot cake. Instead of making an ordinary carrot cake, I added spices like cinnamon and pecans from one of the herbs and spices company in Canada.
    This carrot cake utilizes almost no sugar and is extremely fragrant and sweet from molasses and dried figs. Citrus fruit and spices give it a fresh taste. I tried this recipe and my co-workers appreciated me for this recipe. I have my presentation next week and I’m really excited and nervous too. In between, I just thought of sharing the recipe with all the food lovers here. Following are the items you need for preparation:
    1.Whole wheat flour
    2.Cake flour
    3.Packed brown sugar
    4.Ground cinnamon
    5.Carob powder
    6.Baking powder
    7.Baking soda
    8.Salt for taste
    10.Vegetable oil
    12.Orange juice
    13.Grated lemon zest
    15.Dried figs
    16.Poppy seeds
    17.Grated carrots
    18.Chopped pecans
    Don’t get confused seeing the big list. Preparation is so easy. Preheat the oven to 350 degrees. Blend together the wheat flour, cake flour, brown sugar, cinnamon, carob, baking powder, baking soda, and salt. Make a well in the middle and pour in the molasses, oil, eggs and orange juice. Mix until the dry ingredients are moistened and then stir in the orange zest, lemon zest, raisins, figs, poppy seeds, carrots, and pecans until they are evenly distributed. Transfer this into a baking bowl and bake for 1 hour and 10 minutes in the oven. Serve cool.
